ORDER: 1 slice of Margherita con Bufala (mozzarella bufala, San Marzano tomatoes, basil, olive oil), 1 slice of Margherita Con Salame Piccante (Mozzarella bufala, spicy salame, San Marzano Tomatoes, Basil, olive oil), 1 slice of Funghi (Wild mushroom, mozzarella bufala, basil, olive oil), 1 slice of Carbonara (Pancetta, Tomato, Egg, mozzarella bufala, black pepper, olive oil)

REVIEW: 
How do you like them Naples? While new to Manhattan’s East Village, Sorbillo is the opposite of new to the pizza business. The family-run flagship restaurant opened in Naples back in 1935 and consistently ranks as one of the top pizzerias on the most famous pizza street in the world: via Dei Tribunali. The current owners, brothers Gino and Tino, also opened a location in Milan making New York City the third in a budding Sorbillo empire. This could be the first empire where the emperors serve us! And serve us top quality wood-fired Napoletana style pizzas with San Marzano tomatoes, Bufala mozzarella and other imported Italian ingredients. I recommend bringing a friend and ordering one traditional pie like the Margherita Con Bufala and one of their more creative signature pies like the black pepper and egg Carbonara so you can share them in the order they arrive to the table. Having both provides the opportunity to see how complex the flavors of a relatively simple pizza can be and then also taste the nuanced intricacies of the more elaborate concoctions. All the recipes are time tested and true - just like the name. And if I have anything to say about it, the new Sorbillo will be in New York for a long time to come.

Eden Gauteron
1. The first time I met Eden Gauteron for Pizza Month, it was Halloween 2005.  He was wearing a balloon on his head.

2. Richard Morgan informed me of several new words I had never heard before. gentefication and Culisisimo is a Spanish word for Bootylicious.  I told him I many have invented "Manswer" when a male answers on behalf of a group of people. He said he'd heard it before.

3. Paulie Gee was wearing a Marta hat which was the pizzeria we went to together in 2014.  Cool hat and, as he pointed out, it added continuity to our prior pizza months.
