Day 14, 2020: Caulipower (Las Vegas, NV)

ORDER: 5 slices of Caulipower Margherita pizza

REVIEW: 
Cauliflower to the rescue. With a growing population of people targeting gluten and carbs as enemies for either dietary or allergic reasons, Caulipower offers an alternative: cauliflower. First it was cauliflower rice, then mashed cauliflower, and now it's cauliflower pizza crust. Caulipower makes them all. As a pizza crust, the reconstituted vegetable acts as a cracker thin foundation similar to midwest thin crusts like Imo's in St. Louis or Zaffiro's in Milwaukee. Unlike those glutenous options, expect the Caulipower crust to add a subtle cauliflower flavor to each bite. The diced tomatoes, mozzarella cheese, and basil on the Margherita also provide a surprising amount of taste as well but doctoring it up with some additional grated cheese, crushed red pepper or spices could further distract from the imitation crust.  Given the petite size, the crisp consistency and distinct flavors, a Caulipower Margherita would be a great gluten-free hors d'oeuvres to slice up and butler around before a party. If you decide to do that, invite me, post-pandemic, that is!

1. Kevin, Jen, and Clara recommended Caulipower pizza because they eat frozen pizza often but don't eat gluten. This was the first Zoom pizza date ever.

2. Clara has grown up a lot in the last year.  This year she spearheaded the conversation asking some of the best questions I have heard all year including "Do you have a face?", "Do you have a floor?" and "Do you have yellow?"
