Creative and delicious. It was the photo of the Pastrami and Pickles pizza in Las Vegas magazine that brought me into Jason James Pizza Bistro and the entire menu that will bring me back. Admittedly, owner Jason James Nichols hatched the Pastrami and Pickles pie on a whim inspired by a sudden influx of available pastrami but the creation has taken on a life of its own. Beyond the perfectly sliced and distributed namesake ingredients, Nichols layers just right amount of Spanish onions, oregano, and dijon & thyme infused garlic sauce with an asiago cheese blend, to create a fusion of a savory pizza and a tasty sandwich. Definitely order at least a small and don’t be surprised if you find yourself ordering another one. Despite the unorthodox marquee item, all of the pizzas are prepared in very traditional methods including a 60-70% hydration dough fermented for 3-5 days and baked in the gas-powered brick oven. The result is a thin, crisp and sturdy crust providing ample support for the high quality toppings. These toppings include everything from the typical pepperoni and mozzarella to the more exotic jalapeños and figs. Bring your friends, families, and little league teams to Jason James Pizza Bistro’s spacious dining area but, most importantly, bring your appetite!

1. My Aunt Cynthia lives in Las Vegas. We both grew up military brats moving around a lot. She attended 13 schools (I attended 9) because of it. Her moving didn't stop her from becoming a Colorado state bowling champion.
2. Roger used to drive race cars in the Salt Lake Stock Car club back in the late 1950's through early 1960's.
3. Lily and Paul Rothman attended a Halloween party after we had pizza where Lily went as a bird and Paul went as a bird watcher.
4. Robin Rothman and I had steak for dinner but also discovered pizza flavored potato chips.
