REVIEW: 

A New New York Slice. The "classic New York slice" has changed over time due to innovations in the pizza industry such as availability of ingredients, dough preparation techniques, and oven technology. Brooklyn DOP hopes to be on the forefront of the next evolution by sourcing the freshest ingredients locally. Italian for Denominazione d'Origine Protetta ("Protected Designation of Origin"), the "D.O.P."designation typically refers to products made within Italy, however, Brooklyn DOP uses the term for their products harvested in the New York area. Adhering to conventions, Brooklyn DOP offers large triangular slices loaded with cheese and tomato sauce but then goes beyond. After the signature Giusepp' exits the high heat electric oven, for instance, it is garnished with a generous amount of torn basil and aged romano cheese. The signature Margherita comes standard with thinly sliced marinated shallots then finished with basil and grated cheese as well. Detroit style Sicilian as well as grandma pizzas are also on the menu. All of the slices have a soft, airy outer edge with a firm underside and a crisp bite. On a good weather day, pair your slices with a beer and enjoy them in the backyard or street-side seating areas. If I lived any closer to Brooklyn DOP, I'd likely already be there saving you a seat.

1. Rob Penty taught me that Solo ovens don't produce any smoke even when burning wood. 

Sapphire

2. Sapphire has been living with Rob since January and seems to really like him. When he went to get an additional slice, Sapphire stared at the door Rob went through for the entire time and celebrated like he had been reunited with a long lost love. Sapphire also liked the crust.

3. Rob can name a lot more London area soccer teams than you can.
