ORDER: 1 slice of Roux Pizza Pie (white roux sauce, chicken, spinach, mushrooms, garlic, mozzarella cheese, and parmesan cheese), 1 slice of Spicy Rosa Pizza Pie (White Roux Sauce, Red Sauce, Shrimp, Scallops, Mushrooms, Mirepoix, Crushed Red Pepper), 2 slices of Sicilian Pizza Pie (red sauce, pepperoni, Italian sausage, salami, mozzarella cheese, and parmesan), 1 slice of Eggplant Pizza Pie (Red Sauce, Grilled Eggplant, Parsley, Tomato, Garlic, Olive Oil, Mozzarella Cheese, Parmesan Cheese)

REVIEW:
All the pies! Crust and Roux in Las Vegas’s Town Square specializes in sweet pies, pizza pies and pot pies. I recommend the gourmet pizza pies. These pizzas come loaded with high quality ingredients. The Spicy Rosa, for instance, features both their signature white roux sauce and a rich red tomato sauce along with generous portions of shrimp, scallops, mushrooms, mirepoix, and crushed Red Pepper. And its baked in the gas-powered deck oven perfectly so that the seafood tastes fresh - not bad considering how far Vegas is from the sea. Every pizza pie is served upon a crisp crust hand-stretched buttermilk dough that is literally painted with oil and dusted with parmesan cheese to ensure maximum flavor with every bite. Crust and Roux clearly cares about their product and the friendly staff does too.
