Day 18, 2023: Parashades (Prospect Heights, Brooklyn)

Exterior

DAY 18: OCTOBER 18th, 2023

LOCATION: Parashades (241 Flatbush Ave, Brooklyn, NY 11217)

GUEST(S): Robin Rothman, Elana Fishbein, Michael McLarnon, Andrew Lack

ORDER: 1/2 slice of cheese (Jersey tomato, mozzarella), 1/2 slice of grandma (Marinara Sauce, Mozzarella Cheese, with Parmesan Cheese Crust), 1/2 slice of Potato & Pesto Pie (Thinly Sliced potato, Rosemary, Garlic, Fontina, Mozzarella, Pesto, served with Arugula, Parmesan Cheese, Lemon Zest, and Olive Oil), 1 slice of Soppressata Pie (Soppressata, Mozzarella Cheese, Provolone Cheese, served with Arugula, Lemon Zest, and Olive Oil)

REVIEW:
Slice joint by day, cocktails at night. With the recent opening of Parashades, Prospect Heights lucked into a neighborhood slice shop and a trendy lounge in one! The brainchild of owners Chris Kang and Andrew Kasim, the Parashades business model is the best of both worlds. Local residents and businesses can drop by during lunch and grab elevated street slices that are unique takes on both traditional and non-traditional pies. The grandma, for instance, may appear to be a typical melted fresh mozzarella and rich tomato sauce square but the crisp Parmesan cheese crust will ensure you eat every last crumb. I recommend you get something classic like the grandma or the cheese pie but also something unique like the Fennel Sausage Pie adorned with crème fraîche, crispy potatoes, mozzarella, chives, and red onion. If this sounds familiar, that’s because it was a staple at the owner’s previous pizza establishment in Prospect Lefferts Gardens called Parkside. All of these slices are also available in the evening when the door to the back room and backyard is opened. There you’ll find a full bar for pairing the perfect cocktail with your stellar slice. I can’t wait to see what Parashades does next.

Andrew Lack, Elana Fishbein, Robin Rothman, Sean Taylor, Michael McLarnon
1. Andrew Lack re-taught himself math so he could tutor high schoolers.

2. Elana Fishbein attended a Survivor Convention! She also teaches improv at the Magnet Theater and in Costa Rica.

3. Robin Rothman is considering renaming her award-winning one person improvised show Spontaneous Vegas with Trudy Carmichael. I love it!

4. Michael McLarnon is fresh back from Detroit where he completed his first half marathon. He assures me he also ate Detroit style pizza while he was there.

Chris Kang and Sean Taylor
5. I was fortunate enough to meet one of the owners of Parashades named Chris Kang. We talked pizza past, present and future.
