Small town, big appeal. The town of Blue Diamond, Nevada has a population of about 300 people and one Cottonwood Station Eatery. Fortunately, Blue Diamond has everything it needs because this eatery serves great pizza! Across the street from the combination General Store and Sheriff's office, Cottonwood Station sits in the center of what used to be Cottonwood Spring - a critical stop between Las Vegas and Los Angeles on both the old Spanish Trail and later Mormon Road. Knowing how good the thin crusted personal-sized tavern style pizzas are, Cottonwood Station Eatery may now be a critical stop for an entirely new reason. The pizza menu offers few options, all of which have been perfected from sourcing of the high quality ingredients which are carefully distributed to ensure an even bake. I recommend getting one signature pizza with the savory red sauce and another with the béchamel white sauce. According to an article in the Vegas Sun, owners Jody Lyman and Steve Enger intended to create a cafe with some of their favorite ideas and features of places they visited. This materialized as the Cottonwood Station which, in turn, has become a favorite of anyone who happens to visit it. The spacious outdoor dining patio is as pandemic-friendly as the mask-wearing staff are just plain friendly. It is hard to believe that tucked within a canyon of red rocks just outside of Vegas is a gas-powered dome oven from Italy and a menu of top quality food from California. There's gold in them thar hills and that gold is Cottonwood Station Eatery.

3. My in-laws purchased a metal flying pig that now lives in the courtyard. I urged them to name it and so far Piggly-Wiggly seems to be the favorite.
