REVIEW:
Fresh ingredients and expert technique. Jersey City's Razza has a secret weapon in the pizza war and it is knowledge -- Agrarian knowledge. Owner and head chef Dan Richer studied agriculture in college and everyone of his patrons reaps the benefits #nopunintended. Taking into account the importance of ingredients when producing artisan pizza, Richer goes to the source of the source. Before the dough is proofed and baked in the wood-fired oven, the grain must be grown and milled into flour according to Richer's specifications. His pepperoni provider must meet several rigorous qualifications, such as empty of nitrates and full of flavor! Richer has gone so far as to secure a fledgling herd of New Jersey water buffalo to provide the milk for the in-house buffalo mozzarella. Creative signature pies utilize locally grown Jersey sweet corn and heirloom tomatoes to give an authenticity in the same way Naples has been sourcing locally grown ingredients for hundreds of years. The supremely high grade resources and the ever-evolving cooking techniques ensure a top quality pizza every time at Razza. Located a mere 10 minutes from Manhattan on the PATH train, I can't recommend it enough. Expect a wait since the New York Times rated it the best pizza in New York. And with Dan Richer's commitment to constant improvment of his product, the best will keep getting bester!
